Time to Make the Cupcakes

For Valentine’s Day, try your hand at making cupcakes for your true love. Candace Nelson, founder of Sprinkles Cupcakes and a judge on the Food Network show “Cupcake Wars,” shares suggestions on making and decorating cupcakes. She also teaches food radio talk show host Cleverley Stone how to frost a cupcake perfectly.

Candace Nelson and her husband, Charles Nelson, also present the Houston Food Bank with a large donation live on Fox 26 Morning News. Their five-figure donation is the result of a week-long fundraiser for the Houston Food Bank. Sprinkles is donating 100 percent of the proceeds from the sale of a special Houston Food Bank cupcake to the organization.

Sprinkles Strawberry Cupcakes and Frosting

Makes 1 dozen

Ingredients

2/3 cup whole fresh or frozen strawberries, thawed

1 1/2 cups all-purpose flour, sifted

1 teaspoon baking powder

1/4 teaspoon coarse salt

1/4 cup whole milk, room temperature

1 teaspoon pure vanilla extract

1/2 cup (1 stick) unsalted butter, room temperature

1 cup sugar

1 large egg, room temperature

2 large egg whites, room temperature

Directions

1. Preheat oven to 350 degrees. Line a 12-cup muffin tin with cupcake liners; set aside.

2. Place strawberries in a small food processor; process until pureed. You should have about 1/3 cup of puree, add a few more strawberries if necessary or save any extra puree for frosting; set aside.

3. In a medium bowl, whisk together flour, baking powder, and salt; set aside. In a small bowl, mix together milk, vanilla, and strawberry puree; set aside.

4. In the bowl of an electric mixer fitted with the paddle attachment, cream butter on
medium-high speed, until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce the mixer speed to medium and slowly add egg and egg whites until just blended.

5. With the mixer on low, slowly add half the flour mixture; mix until just blended. Add the
milk mixture; mix until just blended. Slowly add remaining flour mixture, scraping down sides
of the bowl with a spatula, as necessary, until just blended.

6. Divide batter evenly among prepared muffin cups. Transfer muffin tin to oven and bake until
tops are just dry to the touch, 22 to 25 minutes. Transfer muffin tin to a wire rack and let cupcakes cool completely in tin before icing.

Sprinkles Strawberry Frosting (enough for 1 dozen cupcakes)

Ingredients

1/2 cup whole frozen strawberries, thawed

1 cup (2 sticks) unsalted butter, firm and slightly cold

Pinch of coarse salt

3 1/2 cups confectioners’ sugar, sifted

1/2 teaspoon pure vanilla extract

Directions

1. Place strawberries in the bowl of a small food processor; process until pureed. In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and salt on medium speed until light and fluffy.

2. Reduce mixer speed and slowly add confectioners’ sugar; beat until well combined.

3. Add vanilla and 3 tablespoons strawberry puree and mix until just blended. Do not mix too much or frosting will incorporate too much air. Frosting consistency should be dense and creamy, like ice cream.

Empty Bowls: Buy a Bowl, Get Free Soup


Empty Bowls is an international effort to fight hunger, implemented in Houston to benefit the Houston Food Bank. The unique lunch fundraiser will be held Saturday, May 17, 2008, and is a collaboration between Houston area ceramists, woodturners and artists working in all media, the Houston Center for Contemporary Craft and Lawndale Art Center. In its first three years, Empty Bowls Houston has raised more than $85,430 for the Houston Food Bank.

For a minimum $25 donation, attendees receive a simple lunch of soup, bread and water, and then select a bowl from hundreds of one-of-a-kind, hand-crafted bowls donated by Houston area ceramists and craft artists. The empty bowls serve as a reminder of all the empty bowls in our community and the world.

Soup provided by Sweet Tomatoes restaurants, and bread by Whole Foods Bakehouse.

The event will feature live music by The Southern Backtones, Two-Star Symphony, and Mickey Moseley, and live demonstrations by various artists throughout the day.

The event will be held at two neighboring Houston Museum District museums — Center for Contemporary Craft (4848 Main Street) and the Lawndale Art Center (4912 Main Street) — on Saturday, May 17 from 11 a.m. to 4 p.m. Soup service begins at 11 a.m. and is served until it runs out.

Springsteen Tickets Up For Grabs in Online Auction

An online auction for two sets of tickets, including backstage access, to the April 14 Bruce Springsteen Concert at Houston’s Toyota Center benfits the Houston Food Bank.

The tickets are being sold on eBay and 100 percent of the proceeds will go to the Houston Food Bank. Payment will go directly to the Food Bank through PayPal. Every dollar donated to the Houston Food Bank feeds a family of four.

Two concert packs are being auctioned off. Each pack includes two loge-level concert tickets (located in the first tier above floor level) and two passes to the backstage E Street Lounge before the concert.

Say Bon Voyage to Hunger on May 4

The 20th Annual SOS Taste of the Nation Houston ~ Bon Voyage to Hunger event is a culinary extravaganza featuring food and wine from more than 50 of Houston’s finest restaurants and chefs.

Spend a gala afternoon on Sunday, May 4 between 5 p.m. and 8 p.m. strolling, sampling, sipping and socializing with fellow Houstonians on the lovely Meadow at The Houstonian Hotel Club & Spa., located at 111 N. Post Oak Lane.

The Static Band from Lake Charles, La., will perform and an extensive silent auction will be held.

Tickets to the event, which will feature a nautical theme, range between $100 per passenger and $200 per sailor. Sponsorship tables of 10 are also available.

100 percent of all tickets sales will benefit local, state, national and international organziations helping to fight hunger. 70 percent of the proceeds will be divided equally between the Houston Food Bank and The End Hunger Network.

Empty Bowls HoustonWhole Foods Market – Houston will host a Community Giving Day Wednesday, April 9 from 10 a.m. to 7 p.m. to raise money for the Houston Food Bank’s Empty Bowls program

Whole Foods Market will donate 5 percent of the day’s sales from all five Houston-area locations to the Houston Food Bank. Empty Bowls brings together local artists and craftspeople to help fight hunger across the Houston area.

Between 10 a.m. and 7 p.m. on Wednesday, April 9, Empty Bowls committee members and local artists will demonstrate their crafts at the stores and sell teicktes to the 4th annual Empty Bowls Houston event to be held Saturday, May 17.

The five Houston-area Whole Foods Market locations are:
