Pitmaster Gary Burns prepares barbecue
Gary Burns, owner of Gary Burns Old-Fashioned Pit Bar-B-Q, learned how to cook barbecue from his late father, legendary Houston pitmaster Roy Burns. Gary, who opened his restaurant in 2009, shows food radio talk show host Cleverley Stone his barbecue pit and shares his cooking methods for brisket, sausage, ribs and chicken. Burns will participate in the first Houston Barbecue Festival on Sunday, March 24, 2013.

5 reasons diets fail!

January is the month for New Years Resolutions and Weight Loss tops the charts with goals. Ali Miller, registered dietitian with Naturally Nourished is here to tell us about 5 reasons diets fail and how to navigate around your common barriers.
Lack of prioritizing self
This is a primary reason for failure of weight loss. It is a positive characteristic to put others in front of ourselves; however, weight loss requires a significant amount of effort and time. In order to successfully lose and maintain weight loss, you need to allow time for exercise, meal planing, food journaling/recording intake, reflection, cooking/meal preparation, grocery shopping, education, and motivation. If we don’t take care of ourselves such as making meals that are healthy but may not be favorites for our husband or children, we are putting our goals in the back seat. Remember the flight attendant always says, “put on your oxygen mask before helping children and others”. If you take care of yourself and meet your goals, you will be more successful in your care for others. There is a significant difference from prioritizing self and being selfish. You need to carve out the time for your success.
Using food “rewards” for exercising
When we start exercising we have a short term of hypermetabolic phase (elevated metabolism) which can last between 4-10 days. It is important during this time to anticipate increased hunger with a balance snack and focus on protein containing foods for muscle recovery. Following this phase we want to re-evaluate our intake and decrease calorie intake. Beyond a shift in hunger with a new exercise routine, we are typically guilty of over estimating calorie expenditure. For example, we may burn 300 calories on the elliptical (which may be inaccurate based on the machine) and then compensate with a 550 calorie cupcake! That would be a net increase of 250 calories on that day.
Suffering from the perfect-eating syndrome
Skimping on your favorite foods can lead to falling off your diet plan. When working with clients, I often identify non-negotiable and work these foods into their meal plan for optimal sustainable success! Take the time to reflect on these foods and make reasonable trade offs to keep them in your meal plan. When we over-restrict and take drastic shifts it often leads to over-compensation and ultimately failure.
Expecting too much, too soon
You have to remember, the weight didn’t come on over night! A reasonable aggressive weight loss goal would be 2-3 pounds per week, which would be a deficit of 1,000-1,500 calories per day. This can come from a combination of restricted intake or deficit from metabolic rate and increased expenditure.
As an example: If you have a 2,000 calorie metabolism, you may eat at 1,500 calories and burn an average of 500 calories per day for a 1,000 calorie deficit or 2 pounds of weight loss per week.

We are all biochemically unique with various schedules, stress levels, and food likes/dislikes. We have different nutritional needs, different caloric needs, and different food intolerances. It is important to have a licensed professional to customize a plan to best fit your needs. An ideal meal plan is geared specifically to address your wellness goals taking into account your medical conditions through analysis of lab values, current (starting point) diet, schedule, and needs.

Migas Make-over

Breakfast is the most important part of the day, choosing foods with protein will aid in boosting metabolism and curb cravings throughout the day! Better yet, choose an option that incorporates vegetables as well for added volume and antioxidants with minimal calorie impact!
- 12 whole Large Eggs
- 1/4 cup Half-and-Half
- 1 Tablespoon Butter
- 1 Tablespoon Olive Oil
- 1 whole Medium Onion, Chopped 1 whole yellow bell pepper, Roughly Chopped
- 1 whole Red Bell Pepper, Roughly Chopped
- 1 whole Jalapeño, Seeds And Membranes Removed, Finely Diced
- 1/2 cup salsa
- 2-3 cups crushed baked tortilla chips
- 1 cup Mexican cheese blend, shredded (may Use Cotija, Cheddar, Monterey Jack, etc.)
- 1 cups Cilantro, Chopped
- 1 package baby spinach
- 2 cups cooked black beans (or 1 can rinsed black beans)
In a bowl, whisk together eggs and half & half, set aside. In a large skillet over medium-high heat, melt the olive oil with the butter. Add onions and bell peppers and cook until starting to turn brown/black, about 3 to 4 minutes. Add in diced jalapeño and stir to combine. Add salsa to the skillet and stir around, then add chip pieces, stirring to combine.
Reduce heat to low, this is key to ensure you don’t overcook your eggs! When the heat has decreased, pour egg mixture into skillet. Stir gently to cook with the peppers, folding mixture very gently as it cooks. Turn off heat, fold in grated cheese and chopped cilantro. Serve on a bed of baby spinach with 1/2-1 cup black beans. Yum!
