Wine & Food Week 2011 an Eater’s ‘Haven’

Fine wine and excellent food? What a combination! The Woodlands will be the place to be from between June 6 and 12 during Wine & Food Week 2011.

Randy Evans, executive chef of Haven, will be taking part in the Wine Rendezvous Grand Tasting and TEXAS MONTHLY Chef Showcase on Saturday, June 11. As a preview to his contribution to the chef showcase, Evans prepares an entree with all sustainable ingredients on FOX 26 Morning News.

During the the Wine Rendezvous Grand Tasting and TEXAS MONTHLY Chef Showcase, 50 restaurants will be represented to compete for the national Wine & Food Week’s Waterford Crystal Chef of Chefs award. Event tickets cost $125 in advance or $175 for access to the Cadillac Premium Lounge.

2011 SpringFest Wine and Art Festival

Visitors to historic Old Town Spring will have the opportunity to taste Texas wines and view local works of art Saturday, March 5, and Sunday, March 6 at the  13th Annual SpringFest Wine and Art Festival.

The event is free to the public, but anyone who wants to take part in the wine tasting will need to pay $25 per ticket, which includes a commemorative wine glass.

The festival will benefit the Spring Preservation League, a non-profit foundation dedicated to the preservation and beautification of Old Town Spring, community projects and maintains contributions to a variety of service organizations.

Parking will cost $3.00 and a portion of the proceeds will benefit the Knights of Columbus.

Texas Wine Month – Champagne and Sparkling Wines

During Texas Wine Month, FOX 26 Morning News Extra wants everyone to learn the basics of wine. Sommelier Saree Mulhern shows food radio talk show host Cleverley Stone various Champagne varieties and sparkling wines.

All Champagne is sparkling wine, but not all sparkling wines are classified as Champagne. Champagne must be made in France. Spain produces a sparkling wine called Cava and Italy makes Prosecco wine. Champagne prices can range from moderate to very, very expensive. Sparkling wines may be a less expensive alternative to Champagne.

Texas Wine Month – Rosé Wines

During Texas Wine Month, FOX 26 Morning News Extra wants everyone to learn the basics of wine. Sommelier Evan Turner shows food radio talk show host Cleverley Stone various rosé wines and explains Texas Wine Month. Rosé is a style of wine and it can be made from any number of red grapes. Wine gets it color from grape skins. To make rosé wine, the juice is removed earlier in the fermentation process. Most rosé wines are inexpensive.

Crab Avocado Timbale with Messina Hof Winery & Resort

Winemakers Paul & Merrill Bonarrigo, owners of Messina Hof Winery & Resort in Bryan, demonstrate how to make a crab avocado timbale and share wine pairing tips. They also preview Texas Wine Month, which will take place throughout October at the Messina Hof Winery & Resort.

Crab Avocado Timbale
Source: Messina Hof Winery
Suggested wine pairing: Messina Hof Pinot Grigio or Riesling

Tools needed: Ring Mold

Ingredients

¼ Avocado, sliced
2 Slices of Roma Tomatoes
2 oz. Lump Crabmeat
2 oz. Cilantro Vinaigrette (or your favorite vinaigrette dressing)
¼ cup Shredded Spring Lettuce Mix
2 Grape Tomatoes
Pinch of Alfalfa Sprouts
Drizzle of Chili Oil

Directions

1. Using a ring mold, place the mold in the center of the plate.
2. Arrange the shredded spring mix around the mold.
3. Place the avocado in the bottom of the mold.
4. Add the tomato slices on top of avocado, pressing down slightly.
5. In a separate bowl, combine the crab with the vinaigrette and toss to coat. Add to the top of the tomatoes.
6. Gently remove the contents of the ring mold.
7. Drizzle with chili oil and finish with sprouts on top.
8. Garnish with grape tomato halves.

Cilantro-Lime Vinaigrette

Ingredients

3 T. Chopped Fresh Parsley
3 oz. Chenin Blanc Wine
1/2 cup Fresh Lime Juice
1/4 cup Chopped Fresh Cilantro
2 T. chopped Fresh Garlic
1/4 cup White Vinegar
2 T. Dijon Mustard
1/2 cup Honey
3 cups Vegetable Oil

Directions

1. Combine all ingredients except oil.
2. Then slowly drizzle oil in, until all has been added.
3. Taste to check seasonings. Add salt & pepper as desired.

Mushrooms and Wine from the ‘Backstreet’

Backstreet Wild Mushroom Casserole with 1987 Pedro Ximenez Sherry

  • 1 tablespoon butter
  • 1 tablespoon extra virgin olive oil
  • 2 shallots, cut into quarters
  • 1 lb mixed wild mushrooms (cut into halves and quarters. If you are using Hen of the Woods,
  • leave in small clumps)
  • 1 tablespoon minced fresh thyme
  • 1 teaspoon minced fresh sage
  • 2 tablespoons slow-roasted garlic (we keep that at the restaurant – can use 1 tablespoon fresh for
  • a slightly sharper flavor)
  • 3/4 cup Pedro Ximenez Sherry
  • Pinch salt and freshly ground pepper
  • 1/2 cup heavy cream
  • 3/4 cup shredded pecorino romano cheese
  • 1/4 cup truffle cheese (Sottocenere)

Directions:

  1. Heat large sauté pan over medium-high heat, add butter and olive oil.
  2. When hot, add shallots and stir until soft.
  3. Add mushrooms, thyme, sage, and garlic.
  4. Cook between 3 and 5 min, stirring until mushrooms absorb liquid and are slightly caramelized.
  5. Add sherry salt and pepper.
  6. Cook over medium heat till reduced and syrupy.
  7. Add cream, reduce until sauce is thick enough to coat the back of a spoon. Adjust seasoning.
  8. To finish the dish, add mushroom mixture to a casserole and mix in cheeses.
  9. Brown casserole in the oven for 10 minutes.
  10. Serve with crusty sourdough or ciabatta toast.
