Graduating from culinary school at age 13, Tyler Stone is America’s youngest celebrity chef today at age 23. He’s visiting Houston for Wine & Food Week in The Woodlands. Recipe: Super Bowl Sliders

Sliders

Ingredients

  • Slider Meat (2oz. Each)
  • Carmelized Onions
  • Brioche Buns
  • Sour Pickles
  • Clarified Butter
  • Ketchup

Directions

  1. Season slider meat with salt and pepper and place seasoned side down on buttered flat top.
  2. Place buns cut side down on heavely buttered flat top to toast.
  3. Place 2.5oz. Carmelized onions on flat top and warm for service, (do not brown)
  4. Flip sliders after 4 minutes of cooking, cook an additional 3 minutes to ensure doneness.
  5. Flip buns an d squirt a small ring of ketchup on each top.
  6. Top each slider meat with onion and sour pickle.
  7. Place meat onion and pickle on bottom bum and top with ketchup’ed top.

Slider Meat

Ingredients

  • 10 lbs. Ground Buffalo Meat
  • 1 lb. Cotija Cheese
  • 3T. Chili Arbol
  • S&P to taste

Directions

  1. Mix evenly.

Caramelized Onions

Ingredients

  • 10 Jumbo Yellow Onions
  • 1/4c. Worsheshire Sauce
  • 4T. Clarified Butter
  • Salt and Pepper to taste

Directions

  1. Sautee all ingredients together
