Grilled Brie and Turkey Sandwiches
Ingredients
- 2 slices pagnotta bread
- 2 or 3 slices cooked turkey
- Brie with the rind removed and thinly sliced
- ½ cup pesto (available at Central Market’s Bulk Bar)
- 2-3 tablespoons butter, melted
- Cranberry Sauce for dipping
Preparation
- Generously spread pesto on one side of each slice of bread.
- Heat a grill pan over medium-high heat. Brush pan with butter and add one slice of the pagnotta bread, dry side down, pesto side up.
- Top with the brie then the turkey and the second slice of bread, pesto side down.
- Grill until nicely browned then turn and grill again until browned.
- Slice crosswise and serve with the cranberry sauce.
Curry Turkey Salad
Ingredients
- 2 tablespoons sour cream
- 2 tablespoons plain yogurt
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
- 1 teaspoon curry powder
- ¼ teaspoon salt
- ¼ teaspoon freshly ground pepper
- 2 cup chopped cooked turkey
- 1 cup seedless red grapes, halved
- ½ cup diced celery
- ¼ cup chopped red onion
- 2 tablespoons cashew pieces
- Pita Bread
- Leaf lettuce
- Sliced tomatoes
Preparation
- Whisk together sour cream, yogurt, lime juice, curry powder, salt and pepper in a large bowl.
- Add turkey, grapes, celery, onion and cashews and stir gently to combine.
- Serve with pitas.
