    Recipe: Recycle Your Thanksgiving Turkey Leftovers

    Grilled Brie and Turkey Sandwiches

    Ingredients

    • 2 slices pagnotta bread
    • 2 or 3 slices cooked turkey
    • Brie with the rind removed and thinly sliced
    • ½ cup pesto (available at Central Market’s Bulk Bar)
    • 2-3 tablespoons butter, melted
    • Cranberry Sauce for dipping

    Preparation

    1. Generously spread pesto on one side of each slice of bread.
    2. Heat a grill pan over medium-high heat. Brush pan with butter and add one slice of the pagnotta bread, dry side down, pesto side up.
    3. Top with the brie then the turkey and the second slice of bread, pesto side down.
    4. Grill until nicely browned then turn and grill again until browned.
    5. Slice crosswise and serve with the cranberry sauce.

    Curry Turkey Salad

    Ingredients

    • 2 tablespoons sour cream
    • 2 tablespoons plain yogurt
    • 1 tablespoon fresh lime juice
    • 1 tablespoon honey
    • 1 teaspoon curry powder
    • ¼ teaspoon salt
    • ¼ teaspoon freshly ground pepper
    • 2 cup chopped cooked turkey
    • 1 cup seedless red grapes, halved
    • ½ cup diced celery
    • ¼ cup chopped red onion
    • 2 tablespoons cashew pieces
    • Pita Bread
    • Leaf lettuce
    • Sliced tomatoes

    Preparation

    1. Whisk together sour cream, yogurt, lime juice, curry powder, salt and pepper in a large bowl.
    2. Add turkey, grapes, celery, onion and cashews and stir gently to combine.
    3. Serve with pitas.
