    Pollo Carmelo with Tomatoes, Mushrooms & Herbs, Fresh Vegetables & Garlic Cheese Mashed Potatoes

    Chicken Ingredients

    4 – 4 oz chicken breasts

    Breadcrumbs

    Flour

    Salt and pepper

    3 eggs – beaten

    Virgin olive oil
    Garnish: Italian parsley (optional)

    Preparation

    1. Pound chicken breasts lightly. Roll them in flour, dip in egg mix. Coat with breadcrumbs, firmly pressing the breadcrumbs into the meat.
    2. Sprinkle with salt & pepper to taste.Sauté in pre-heated olive oil. (Or you can bake them.)

    Sauce Ingredients

    2 oz demi-glace (can also use beef stock, can or box)

    1 oz white wine

    Juice of one lemon

    4 mushroom caps – sliced

    2 oz chopped tomatoes

    Pinch of oregano

    Salt and pepper

    Virgin olive oil

    1 oz chopped parsley

    Preparation

    1. Pre-heat the olive oil and sauté the mushroom caps. Add the chopped tomatoes, oregano, salt and pepper to taste, the white wine and cook for one minute.
    2. Squeeze the lemon juice into the mixture and stir. Add the demi-glace (or beef broth) and chopped parsley

    Garlic Mashed Potatoes Ingredients

    4 Idaho potatoes – boiled

    4 cloves garlic – chopped

    1 oz Extra Virgin olive oil

    Pinch salt and pepper

    2 oz freshly grated Parmigiano

    2 oz vegetable broth (can also use can or box broth)

    Preparation
    1. Mash the boiled potatoes in the pot. Over a low flame and while continuously stirring, add the chopped garlic, salt and pepper to taste,
    vegetable broth, the Parmigiano and the olive oil.

    Vegetable Ingredients

    4 oz broccoli florets
    2 oz zucchini
    2 oz yellow squash
    2 oz baby carrots, cut into small cubes
    Canola oil
    Salt & Pepper
    Palmful of freshly chopped basil

    Preparation
    1. Sauté all ingredients together in hot canola oil.
    2. Season with salt, pepper. Add chopped basil and stir together.

    Presentation:

    1. Place the mashed potatoes in the middle of each plate.
    2. Cut the chicken breast in half and place over the mashed potatoes in a criss-cross design.
    3. Place the vegetables around the mound of potato and chicken.
    4. Spoon sauce over half the chicken. Garnish with Italian Parsley.
