Roundup and Best Bites on February 19

Rodeo Uncorked! Roundup and Best Bites Competition, a Texas-sized food and wine extravaganza, is a premiere event in the Southwest for those who wish to savor the delights of award-winning wines from the International Wine Competition and taste signature dishes submitted for competition by area catering institutions and restaurants. George Malek from Fleming’s Prime Steakhouse & Wine Bar and Stephanie Baird, chairman of the wine committee for the Rodeo, tell food radio talk show host Cleverley Stone all about the upcoming event.

Homemade Horseradish Sauce (Serves 4 cups)
Third Place at Best Bites 2011

Ingredients

  • 3 cups Sour Cream
  • 1/2 cup Prepared Horseradish
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Kosher Salt
  • 1 tablespoon White pepper
  • 4 tablespoons Green onions, minced

Directions
1. Place all ingredients except green onions into a mixing bowl.
Cut the ends off the green onions then mince end to end.
2. Add to the mixing bowl and blend well with a wire whip.
3. Chill until use.
