Need a restaurant that won’t break the bank? “Houston Dining on the Cheap” is a guide to the best 300 inexpensive restaurants in the ‘Bayou City.’ Houston food writer Mike Riccetti is the author of the 480-page book, which includes useful restaurant-related asides and listings sorted by cuisine and area. Chef Gus Saldivia, owner of Saldivia’s South American Grill, a restaurant featured in the book, demonstrates to radio talk show host Cleverley Stone how to prepare Entrana with Chimichurri.

Entrana (Uruguayan Skirt Steak) with Chimichurri

- 1 beef skirt steak
- cooking oil
- salt & pepper
1. Trim all fat from the skirt steak.
2. Sear for 5 mins on each side in pan with a little oil.
- One bunch of parsley, washed
- 1 cup olive oil
- 1/2 cup white vinegar
- 6 cloves garlic, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
- 1/2 teaspoon crushed red pepper
1. Mix all ingredients together in a bowl and serve.
